These scratch-made chicken breakfast patties rely on lean ground organic chicken infused with aromatic rubbed sage, crushed fennel seeds, sweet paprika, and thyme. Baked in a single batch on a sheet pan, they freeze effortlessly and reheat in 45 seconds.

Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with unbleached parchment paper.
In a wide mixing bowl, combine the ground chicken, rubbed sage, thyme, crushed fennel seeds, paprika, garlic powder, onion powder, salt, pepper, and optional maple syrup.
Using clean hands or a spatula, gently mix just until spices are evenly distributed. Do not overmix, which can toughen lean ground poultry.
Divide meat mixture into 8 equal portions (about 2 oz each) and shape into round patties roughly 1/2-inch thick.
Arrange patties evenly on the prepared baking sheet, leaving 1 inch between each.
Bake for 18 to 20 minutes until lightly golden brown and internal temperature reaches 165°F.
